3 Delicious Recipes for a Mason Jar Picnic

Because salads in a jar are way better!

There’s nothing better then relaxing with a loved one outdoors while eating your favorite recipes. Whether going on a picnic or you just need a quick bite these mason jar recipes are refreshing and healthy.

The best way to stuff your jar is to put dressings on the bottom followed with heartier ingredients, like pasta, beans, etc. Then top with your diced veggies and fruits so they stay solid and don't wilt!

Mason Jar Southwestern Salad

Ingredients:

Serves 2

2 cups Spring green salad mix

10 Cherry tomatoes

1/2 cup Black beans

1/4 cup Roasted Corn

1 Avocado

Handful chopped Cilantro

Chives to preference

Directions:

Dice cilantro, chives and avocado. Layer dressing chicken, beans, then tops with all the veggies how you choose. The best thing about this recipe is all of the ingredients are pre made and ready to be eaten! We always love it when we can make our busy lives a little easier.

Berry Coconut Parfait

Serves 3

Ingredients:

⅓ cup dry black chia seeds

2 cups coconut milk

1 ½ cup fresh berries

1 ½ cup granola

1 ½ cup Greek yogurt (optional)

CHIA GEL INSTRUCTIONS:

When preparing hydrated chia seeds, a safe ratio to start with is 1/3 cup seeds per 2 cups liquid. This makes about 3 cups, or three meals/breakfasts, and saves well in the refrigerator (depending on the liquid that you’ve submerged the seeds in). I usually prepare my seeds in a square, lidded-container that holds around 3 cups of liquid. TIP: pour the liquid first, and then fold the chia seeds into the liquid to make sure all sides are coated to prevent clumping. Once the seeds have all been submerged, place the lid on your container and shake/ agitate until thoroughly mixed. Let the seeds sit for two hours, then reagitate the seeds by shaking the container (making sure to hold onto the lid-to prevent it from popping off) before serving.

Layer your mason jar with chia gel, then add fresh berries, yogurt and granola. Top with a splash of honey.

Mason Jar Pasta Salad

Ingredients:

Serves 2

1 cup Rotini noodles cooked

1 can diced black olives

1 Red pepper

1 Green pepper

1 cup Salami

Mozarella balls

2 tbsp Italian dressing

Directions:

Dice red and green peppers, olives and salami. Start to build your jar with 2 tbsp Italian dressing, pasta, salami and then top with your veggies and mozzarella.
